Mixed Fruit Buttermilk Bundt Cake

I have served my children cake for breakfast because I am a good parent and I am not a hypocrite.  Sometimes I’d be too tired to make breakfast in the morning, so I would eat cake.  And because I tried to raise my children to be honest and fair, I would let them eat cake too.  Because good parenting.  Judge me if you want, but cake is essentially eggs, wheat, and dairy, all of which are included in most balanced breakfasts, so fight me on this 💪 This cake also has fruit in it, so tell me that’s not breakfast! Go ahead!  Oh wait, you can’t.  Totally breakfast.  Also, cake is dessert, so I have also saved time and I am winning at life.  Two birds, one cake.  You, too, can win at life with this recipe. Coconut and Lemon Curd Cake

I grew up in The South (capitalization on purpose). I was born in Chattahoochee County, Georgia, lived most of my life in South Texas, and often visited my Grandma Olga Mae in Noxubee County, Mississippi. The South. One of my fondest memories is sitting on the screen porch of my Dad’s house on Broad Street during a summer rainstorm. I remember listening to the sound of the rain and feeling the light spray of mist coming through the screen. I remember watching the lightning flash and counting down the thunder.  I remember playing board games, drinking sweet tea, and eating coconut cake. This is my taste of The South.  (Read more…)

Buttermilk Chocolate Cake

When we lived in Hood River, Oregon, my youngest daughter and I would sometimes go to the locally owned market and get their single layer fudge cake.  And eat the heck out of it.  Oh my goodness, that cake.  It was the perfect chocolate cake in the perfect size.  I can get overwhelmed by a layer cake.  I appreciate their beauty as much as anyone, but in real life, sitting on your cake stand,  it can be a lot of cake.  (Plus, to be honest, I’m not very good at cake decorating.  It ain’t pretty.) This Buttermilk Chocolate Cake, baked and served in an 8X8 cake pan is my tribute to the best small chocolate cake I’ve ever eaten.  Perfect for small families, sharing with a friend or loved one, not sharing at all and just going in with a fork… I don’t judge.  It’s hard to judge with chocolate on my face. I love a mini food.  Mini tacos, mini pies, mini cupcakes, they’re all great.  And now I know that I love mini pineapple upside-down cakes.  Look at these tiny babies.  They were actually a special order from my son-in-law.  I sent out a group text to the family for what should go on my empty cake stand and he sent me a pineapple GIF in response.   Since actually creating a pineapple is a bit beyond my amazing culinary powers, I assumed he meant pineapple upside-down cake.  Message received.  I could have made a full cake and sent him a slice or two, but to miss the opportunity to make a mini version of something?  I don’t think so.
