There's not much to the recipe, but so much to love about the flavor. Since I first invented Everything-Seasoned Bacon (Yes, invented! When the idea occurred to me I Googled it, but couldn't find anyone else making it or even talking about it!), it has become the go-to bacon in our house. The Boy wants it on burgers, in BLTs, on the side of everything, because it. Is. Everything!
You can, of course, buy Everything Bagel Seasoning at your local Hipster Joe's. It's fine. But there's something quite satisfying about making something yourself, especially if you'll be using it a lot. And you will! A note about my Everything Bagel Seasoning: my recipe makes quite a bit, but I haven't found that to be a problem. I've sprinkled it on salmon, for the most amazing seared salmon you'll ever taste (I'll share that recipe soon!). I've sprinkled it on little pizzettes with cream cheese and smoked salmon, and it's the topping on my delicious Jalapeño Corn and Bacon Everything Bagel Muffins. So, mix it up, put it in a mason jar, and keep it close at hand!
Mix "everything seasoning" ingredients in a bowl. Done.
Preheat oven to 400°
Spray a rack and sheet pan with non-stick spray. Place the rack in the sheet pan so the pan catches all the grease drippings, and lay the bacon in a single layer on the rack. It's okay if they're very close to each other because there will be shrinkage.
Brush liberally with Maple syrup. The syrup will slightly candy the bacon, and the sweetness will play a great counterpoint to the saltiness of the bacon and the seasoning. So lube it up!
Bake at 400° for 20 minutes. Remove from oven and flip the bacon. There has probably been some shrinkage by now, so you can move things around a bit to give each slice some space. Brush the second side with a liberal amount of Maple Syrup, and sprinkle the bacon well with your Everything Seasoning.
Place back into oven for another 20 minutes or until nicely browned.
Remove from oven and allow to cool for a few minutes before placing on a platter with parchment paper to cool some more. Or you could just decide to take the ouchy-mouth risk and eat it, because... it's Everything-Seasoned Bacon. C'mon. It's a little sticky, so you don't want to leave it on the tray too long.
