Chocolate Espresso Cupcakes with Peanut Butter Frosting

I’ve said it before, and I’ll say it again and again: A cupcake is the perfect food.  It’s compact, portable, portion controlled by design, and, in a pinch, it’s breakfast!  I mean, it has wheat AND dairy, just like a bowl of cereal!  You’re welcome 😉  And here, I’m adding a legume topping: Peanut butter frosting!   Get on board with my new food pyramid.  The view is great from the top! (Read more…)

Were you one of those kids who loved Hostess Cupcakes?  You know the ones, the dark chocolate cupcakes with that yummy white cream filling and the adorable white squiggle on top?  Maybe your mom even put one in your lunchbox from time to time.  Maybe you didn’t have a Korean mom who put things (dried things with tentacles) in your lunchbox that no one in their right mind would ever trade for a delicious cream filled chocolate cupcake.   Okay, that spiraled quickly.  That’s a therapy moment.  Anyway!  Who likes chocolate cream-filled cupcakes? Fluffiest Vanilla Cupcakes Ever with Strawberry Buttercream

A cupcake is the perfect food.  I’ll fight you on this point. When you’re a diabetic, or have any other health or dietary reasons to watch what you’re eating, portion control and moderation are what it’s all about.  And a cupcake is, by definition, a self-contained, self-regulated serving of cake.  Don’t look at those other 23 cupcakes behind you.  DON’T LOOK AT THEM!!  Phew 😅.  Focus.

If I’m going to have that cupcake, that self-regulated serving of cake,  it had better be worth it.  In pursuit of the perfect treat-day cupcake recipe, I’ve had to force more than a few mediocre cupcakes on my family.  The Goldilocksian variety is staggering.  Too dense, too dry, too chewy.  Not anymore.  After much cupcake tomfoolery, I’ve finally created my dream cupcake.  Fluffy and light, vanilla without being, you know, too vanilla,  great with any frosting, especially this very special strawberry one.
