Cinnamon-Cardamom French Toast

Maple macerated berries (optional)
- 1 pint fresh berries I prefer blackberries (can also use frozen)
- 1 tablespoon granulated sugar
- 2 tablespoons maple syrup
French toast
- 8 slices bread of your choice
- 4 large eggs
- ½ cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla bean paste or vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cardamom
Optional berries
Wash and drain your fresh berries and place in a small bowl. Toss with sugar and maple syrup. Allow to sit and macerate, giving them the occasional gentle toss.
Whisk eggs, milk, sugar, vanilla, cinnamon, and cardamom and pour into a shallow dish, such as a pie plate.
Warm large cast iron or nonstick pan up to medium heat, then drop 1 tablespoon of butter in the pan and allow to melt. Dip bread in egg mixture, turning to coat both sides evenly.
Place a piece of bread in the pan and cook 2-3 minutes, or until golden brown. Flip over and cook 2-3 minutes on the other side. Place on a wire rack set on a sheet pan (to prevent sogginess) and keep warm in a 200° oven. Repeat with the rest of the bread.
Serve with fruit and syrup
Use any bread you like. I used challah, but brioche or even everyday white bread will work. The thicker the slices, the better.
I prefer to use a cast iron pan, because of its heat retention, but a nonstick pan would work great.
